Ingredients

For Marinating the Chicken:

  •  300 grams chicken (with bone, cut into pieces)
  •  1/2 cup plain yogurt (curd)
  •  1/2 tsp coriander powder
  •  1/4 tsp cumin powder
  •  1 tsp Kashmiri chili powder
  •  1/4 tsp turmeric powder
  •  1/4 cup chopped mint leaves
  •  3 cloves garlic (minced)
  •  2 inches ginger (grated)
  •  2 green chilies (optional)
  •  1/4 cup chopped coriander leaves
  •  Salt to taste

For Cooking Rice:

  •  1 cup basmati rice (soaked for 30 minutes)
  •  1 tsp caraway seeds (shahjeera)
  •  2 bay leaves
  •  Salt (as needed)

For Layering and Garnishing:

  •  1 cup sliced onions (fried until golden brown)
  •  1/4 cup ghee (clarified butter)
  •  A pinch of saffron soaked in warm milk
  •  1/4 cup chopped mint leaves
  •  1/4 cup chopped coriander leaves
  •  Cashew nuts and raisins (optional for garnish)


 Step-by-Step Instructions

 Step 1: Marinate the Chicken

   1. Prepare the Marinade: In a bowl, combine yogurt, coriander powder, cumin powder, Kashmiri chili powder, turmeric powder, mint leaves, garlic, ginger, green chilies, coriander leaves, and salt.

   2. Marinate:  Add the chicken pieces to the marinade and mix well. Cover and let it marinate for at least 1 hour, preferably overnight in the refrigerator for better flavor.

 Step 2: Prepare the Rice

   1. Wash and Soak: Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.

   2. Cook Rice: In a large pot, bring water to a boil. Add caraway seeds, bay leaves, and salt. Once boiling, add the soaked rice and cook until it is about 70% cooked(it should still have a bite). Drain and set aside.

 Step 3: Assemble the Biryani

   1. Layering: In a heavy-bottomed pot or biryani pot, spread half of the marinated chicken at the bottom.

   2. Add Rice: Layer half of the cooked rice over the chicken.

   3. Garnish: Sprinkle half of the fried onions, mint leaves, coriander leaves, and drizzle some ghee and saffron milk over this layer.

   4. Repeat Layers: Add the remaining chicken followed by the remaining rice and repeat the garnishing process.

Step 4: Cooking with Dum

  1. Seal the Pot: Cover the pot with a tight-fitting lid or seal it with dough made from flour to trap steam inside.

  2. Cook on Low Heat: Place the pot on a low flame or use a tawa (griddle) underneath it to diffuse heat. Cook for about 40 to 45 minutes.

  3. Rest Before Serving: Once done, let it rest for another 10 minutes before opening

Step 5: Serve

   Gently fluff up the biryani with a fork to mix layers before serving. Serve hot with raita (yogurt sauce) or salad on the side.
