Here is a detailed recipe for making delicious Mutton Biryani:
Ingredients
- 1 kg mutton, cut into pieces
- 1 cup yogurt
- 2 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 1 tsp biryani masala
- Salt to taste
- 3 tbsp oil
- 2 bay leaves
- 4 cloves
- 4 cardamoms
- 2 cinnamon sticks
- 1 cup fried onions
- 1 cup chopped coriander and mint leaves
- 2 cups basmati rice, soaked for 30 mins
- 1/2 cup milk mixed with saffron threads
- 2 tbsp ghee
Marination
1. In a bowl, mix the mutton with yogurt, ginger-garlic paste, red chili powder, coriander powder, cumin powder, garam masala, biryani masala and salt. Cover and refrigerate for at least 2 hours or overnight.
Cooking the Mutton
1. Heat oil in a pot and add the whole spices - bay leaves, cloves, cardamoms and cinnamon. Fry for 30 seconds.
2. Add the marinated mutton and fry on high heat for 5-7 minutes until the meat changes color.
3. Add 1/2 cup water, cover and cook on medium heat for 20-25 minutes until meat is tender. Check seasoning.
Cooking the Rice
1. Bring a large pot of water to a boil. Add the soaked rice and cook until 3/4th done. Drain and keep aside.
Assembling the Biryani
1. In a heavy bottomed pot, layer half the cooked mutton. Top with half the fried onions, coriander-mint leaves and saffron milk.
2. Layer with half the cooked rice. Drizzle with half the ghee.
3. Repeat the layers once more ending with rice.
4. Cover the pot with a tight lid. Cook on dum on low heat for 15-20 minutes.
5. Remove from heat and let it rest for 10 minutes. Gently mix the layers.
6. Serve hot garnished with more fried onions and mint leaves.
