Butter chicken
Ingredients
For the Chicken
- 1 pound boneless skinless chicken breasts, diced into bite-sized pieces
- 1 tablespoon olive oil or unsalted butter
- 1 large onion, diced small
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
For the Sauce
- 1 cup tomato sauce (or crushed tomatoes)
- 1 cup heavy whipping cream (or half-and-half for a lighter version)
- 2 tablespoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon turmeric powder
- ½ teaspoon chili powder (optional for heat)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
1. Saute the Onions
- In a large skillet, heat the olive oil or butter over medium heat.
- Add the diced onion and saute until translucent (about 5 minutes).
2. Cook the Chicken
- Add the diced chicken to the skillet and cook until browned on all sides (about 5 minutes). The chicken does not need to be fully cooked at this stage.
3. Add Aromatics
- Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant.
4. Incorporate Spices
- Add the garam masala, cumin, turmeric, chili powder (if using), salt, and pepper. Stir well to coat the chicken with spices.
5. Make the Sauce
- Pour in the tomato sauce and bring to a simmer.
- Reduce heat to low and stir in the heavy cream. Allow to simmer for about 10 minutes until the sauce thickens slightly.
6. Serve
- Taste and adjust seasoning if necessary.
- Serve hot over basmati rice or with naan bread, garnished with fresh cilantro.
