Butter chicken 

 Ingredients

 For the Chicken

  • 1 pound boneless skinless chicken breasts, diced into bite-sized pieces
  • 1 tablespoon olive oil or unsalted butter
  • 1 large onion, diced small
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

For the Sauce

  • 1 cup tomato sauce (or crushed tomatoes)
  • 1 cup heavy whipping cream (or half-and-half for a lighter version)
  • 2 tablespoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • ½ teaspoon chili powder (optional for heat)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

 Instructions

1. Saute the Onions

  •   In a large skillet, heat the olive oil or butter over medium heat.
  •   Add the diced onion and saute until translucent (about 5 minutes).

2. Cook the Chicken

  •  Add the diced chicken to the skillet and cook until browned on all sides (about 5 minutes). The chicken does not need to be fully cooked at this stage.

3. Add Aromatics

  •  Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant.

4. Incorporate Spices

  •  Add the garam masala, cumin, turmeric, chili powder (if using), salt, and pepper. Stir well to coat the chicken with spices.

5. Make the Sauce

  •  Pour in the tomato sauce and bring to a simmer.
  •  Reduce heat to low and stir in the heavy cream. Allow to simmer for about 10 minutes until the sauce thickens slightly.

6. Serve

  •   Taste and adjust seasoning if necessary.
  •   Serve hot over basmati rice or with naan bread, garnished with fresh cilantro.

Tips :

  •   For an even richer flavor, consider marinating the chicken in yogurt mixed with spices for at least 30 minutes before cooking.
  •   If you prefer a vegetarian version, substitute chicken with tofu or chickpeas.
